Whole Leaf Lettuce Salad with Avocado Dressing

Lettuce is loaded with beneficial nutrients like fiber, iron, B, C and K vitamins. Add an organic egg and you have your protein. Hemp seeds are loaded with protein as well.

Serves 2


1 whole leaf lettuce

2 organic eggs

1/4 cup organic red or green grapes

1 avocado

1/2 cup cherry or sun gold tomatoes

hemp seeds for a little crunch, or 2 strips of crispy bacon for a salty, crunch.

1/4 tsp. sea salt, or to taste

4 tbsp. Extra virgin olive oil

1/2 lemon, juiced

1/4 cup parsley leaves, minced

1/4 cup buttermilk, optional

Dressing;

In a medium bowl mash avocado. Add lemon juice salt and olive oil. Add butter milk if using. Add half of the fresh parsley, mix well. If to thick thin out with olive oil, lemon juice or buttermilk. Taste again for seasoning.

Place whole lettuce in large bowl or plate. Add sliced eggs and all other ingredients. Pour dressing over evenly and serve.
