Shaved Fennel & Medjool Date Salad

Medjool dates give this simple salad a sweet contrast to the fennel.

The vitamins and minerals in fennel contribute to good digestion and heart health.

Prep time/ 15 minutes

Serves 4

2 bulbs fennel, shaved with mandoline

1 carrot, grated

8 medjool dates, pitted and cut into pieces

1/4 cup parsley, chopped

2 tbs white balsamic vinegar

4 tbs extra virgin olive oil

1/8 tsp sea salt, or to taste

fresh ground black pepper

In a medium bowl, shave fennel thinly. Add medjool dates and grated carrots.

Whisk together vinegar and sea salt, then whisk in olive oil. Taste for seasoning.

Plate shaved fennel stacked in a pile. Add a couple of dates on top, and sprinkle with chopped parsley and dressing.
