Herbed Arugula Walnut Salad

Antioxidants and essential minerals found in arugula help cleanse out toxins in the body. Walnuts are a great source of protein.


Serves 4


1 large bunch Arugula

2 ripe tomatoes

1/2 cup walnuts, lightly toasted, large chop

1/2 cup each of Basil & Parsley

3 sprigs thyme, minced

1 tbsp. chives, minced

1 shallot, minced

1/2 lemon, juiced

1/4 tsp sea salt

3 tbsp. extra virgin olive oil

Dressing: add minced shallot, salt and lemon juice to a small bowl. Let sit for 10 minutes. Start whisking in olive oil in small amounts to get a nice emulsion. Set aside.

In a large bowl add arugula, tomatoes, walnuts and all the herbs. Gently toss. Add half the dressing to salad and toss.

Plate salad, and drizzle the remaining dressing over it.

Chef's Note: Adding a bit of feta or goat cheese is a nice addition.
