Garbanzo Socca Over Easy Eggs Cucumber &Radish ~ Grain-free

Socca is a popular street food in Monaco, and along the south coast of France. A savory thin pancake of chickpea flour, water and oil cooked on a skillet. Easy to prepare.


Garbanzo is a great protein source. It can improve digestion, and can aid in weight management reducing the risk of several diseases.


Makes 8 pancakes

1 cup Garbanzo flour

1 1/4 cup filtered water

1/4 cup good olive oil

1/2 teaspoon salt

1/4 cup chopped scallions ( or other herbs or a mixture )

Dash of fresh pepper

oil for frying ( High heat oil, like coconut, canola, grape seed )


Whisk all the ingredients together, in a medium bowl. Cover with a tea towel in place in the refrigerator for an hour.


In an 8’’ non stick hot pan heat a tsp of oil . Pour a small ladle of batter into pan. Swirl the pan a little. Cook for about 2-3 minutes, when bottom is a nice golden brown, then flip and cook for 2 more minutes

Fry up a couple of eggs, slice some radish and cucumber. Drizzle with lime or lemon, olive oil, and flakey salt.

For Vegan, add grilled Tofu.


Cooks note:

The first crepe might not look so pretty, but it is delicious.

They freeze well up to a month.
