Date and Hazelnut Truffles

These delicious healthy treats are a wonderful addition to the holiday table!

Makes 20 Truffles


12 - Medjool Dates (pitted) soaked in warm water

1/8 cup Cranberries (dried) soaked in warm water

1/4 cup Hazelnuts (raw) or other nuts.

1/4 cup walnuts (raw) or other nuts

1/4 cup Raw pepita seeds (pumpkin)

vanilla bean (scrape half of bean) or 1 tsp vanilla extract

orange zest (1 orange)

pinch of fine sea salt

1/4 cup Shredded coconut (some toasted)

1/4 cup toasted pistachios, then grind to powder

1/4 cup bittersweet chocolate, grind to powder



After removing pits from dates soak in warm water along with dried cranberries for 5 minutes.


Drain.


Put in food processor and pulse several times. Add half the nuts, vanilla, salt,orange zest and pulse a few more times. Add the remainder of the nuts and pulse just enough to combine.


Place mixture in refrigerator for at least 15 minutes to chill.


Set up three bowls one with toasted coconut, pistachio, chocolate.


Roll date mixture into small balls and roll into desired topping.
