Chai Seed Porridge with Seeded Coconut Granola ~ Vegan

This protein rich breakfast is easy to make and warms you up on a cool winter morning.

Prep time: 5 minutes

Cook time: 10 minutes




Serves 2

4 tbsp. black Chai Seeds

2 cups Almond milk, or other non dairy milk

2 tsp. coconut sugar

1/2 tsp. cinnamon

1/4 tsp cardamom powder, optional

1/4 tsp. sea salt

1/2 cup seeded granola, recipe below


In a small pot add chai seeds, salt, and almond milk and cook on low to medium heat. Cook for about 10 minutes, or until thickened and creamy.


Add cinnamon, cardamom, coconut sugar, and sprinkle with seeded granola. Add more almond milk if desired.


Seeded Granola ~ I like to make a big batch and keep in the refrigerator.

1 cup sunflower seeds

1 cup pepita seeds

1 cup walnuts, pecans, or other nuts, chopped.

1 tbsp. coconut sugar

1/4 cup coconut oil, melted

1/2 tsp. sea salt


Preheat oven to 350

Mix all ingredients in a bowl. Transfer to baking sheet, lined with parchment paper, and lay out seed mixture flat. Roast for 8-10 minutes, just until slightly golden.
