Warm Broccoli salad with Caramelized Onions and Garlic

Broccoli is a good source of vitamin K and calcium, two vital nutrients for maintaining strong, healthy bones

Onions are loaded with antioxidants. Helps Control Blood Sugar.



Serves 4


1 large head of broccoli , or 1 lb broccolini

2 onions, sweet, or yellow, sliced thin

4 cloves garlic, sliced thin

1 tsp. salt, or to taste

pinch of pepper, or red pepper flakes

2-4 tbsp.extra virgin Olive Oil, or other oil

1 lemon, Juiced

1/4 cup fresh parsley, chopped



Preheat oven to 375.



On a baking sheet or stainless steel pan, drizzle some olive oil. Lay sliced onion in a single layer, and drizzle more oil on top. Sprinkle with 1/4 tsp. of the salt.

Roast for about 45 minutes ,or until onion becomes golden brown, and soft.

After 20 minutes, add the garlic to pan, and finish roasting.

Keep an eye on the garlic.


When onions are close to finish, saute the broccoli.


If using broccolini which cooks a bit faster, Saute in a pan with 1 tbsp. olive oil, & a sprinkle of salt. Cook for 5 minutes, or until tender.


If using a traditional head, cut into small florets, and use the same method above. It might take a couple of minutes longer.


In warm bowls, add the broccoli. Top with onions & garlic. Drizzle remainder of olive oil, and a squezze of fresh lemon. Taste for seasoning. Sprinkle with fresh parsley.
