Walnut Date Apple Cake ~ Vegan

This Low Carb Apple Cake is the perfect holiday treat. Caramelized apples laced on top of a walnut & date crust, toped with a coconut cream for a healthy indulgence.

Serves 4 -6


Ingredients

4-5 honey crisp apples, or other (organic)

1 tbsp lemon juice

1 tbsp. coconut oil

1 tsp. coconut sugar

nutmeg, for finishing

Date Crust

12 medjool dates, pitted, soaked

1 1/2 cups raw walnuts

pinch of salt

1/2 tsp. vanilla

1-3 tbsp. filtered water


Coconut Whipped Cream

1 can unsweetened coconut milk, chilled

1 tbsp. pure maple syrup, to taste

dash of vanilla extract


Apple Method ~ Core the apples. Leaving the skin on, slice the apples in thin slices. Squeeze fresh lemon juice over the apples. Sprinkle with coconut sugar. In a large non stick pan, on medium heat, add coconut oil into the pan. Place apple slices in the pan , and caramelize until edges are golden brown, and apples are tender. About 5 minutes.

Set aside. Do in batches, if the pan is to crowded. Apples can overlap a little. Use tongs to turn apples.


Crust - Soak the dates in warm water for 5 minutes to soften. Remove the pits, and give the dates a rough chop.

Put all the ingredients, except water in a food processor and pulse several

times until well blended. Start with1 tbsp water and mix until combined.

Leave some of the walnuts chunky.


Place the crust mixture on a parchment lined 9 " spring form pan, or tart pan, with removable bottom. Press down until even all around. Chill for one hour. Remove the crust from pan of choice. Can be made into free form circles, then chill.


Coconut Cream ~ Take the solid part only of the cold coconut milk. reserve the liquid for a smoothie or other use. Place the solid part in a mixer with whisk attachment.

Add the vanilla, and maple syrup, and whip until it looks like whipped cream.

Keep cold until serving. Use fresh whipping cream if you prefer.


Assembly ~ Gently remove the crust from the tart pan. Cut the crust in slices before laying apple slices on top. Squeeze with fresh lemon juice, and lay on top of the date crust. Drizzle with the coconut cream. Dust nutmeg on top to finish.
