1 lb. organic ground turkey
1/2 lb. shiitake mushrooms, small chop
1/2 cup fresh parsley, chopped
1 tbs. fresh thyme, minced
1 tbsp. miso paste, optional
1 carrot, grated
3 tbs. garbanzo flour, or almond flour
1 tsp. sea salt
1/8 tsp. black pepper

Mix all ingredients together. Make a loaf shape. Bake at 375 for 35-45 minutes, or until golden on top. Let sit for 10 minutes , before slicing.
Serve with vegetable of your choice.
1 cup chicken stock
1 tbs arrowroot or tapioca flour, mix in a little water first.
salt to taste
pepper to taste
1/2 cup chopped cooked shiitake mushrooms
1 tbsp. miso
1 tbsp. fresh lemon juice
1 tbsp. parsley, chopped
Heat all ingredients on stove top, until gravy gets a bit thicker. Add more arrowroot if needed. Add parsley and lemon at the end.
Cooks note: Mixture can be made a day ahead. Store in refrigerator.
