These plant based noodles are grain-free ,and Low carb. Add shavings of Parmigiano Reggiano , garlic, and lemon and you have a healthy weeknight dinner in less then 20 minutes.

2 bags of miracle noodles
1-2 bunches broccolini
4 garlic cloves, sliced thin
1 lemon, zested, and juiced
3/4 tsp. sea salt, to taste
1/8 tsp. red pepper flakes
1 cup shaved, or grated Parmigiano Reggiano
1/2 cup fresh parsley, chopped
1/2 cup pine nuts, or other walnuts
2 tbsp. extra virgin olive oil, extra for finishing the dish
Drain the noodles in a colander. In a large nonstick dry pan, on medium heat, put the noodles in and remove all the moisture. Place the noodles in a warm bowl, sprinkled with half the salt.. Set aside.
Add 2 tbsp. olive oil, shaved garlic , and red pepper flakes to the same pan. Cook for 1 minute. Add the broccolini, and the rest of the sea salt, and continue to saute, until tender, but firm, about 5 minutes. Add lemon juice, and zest, and stir to coat the broccolini. Add more oil if it seems dry.
Place the noodles back into the pan, with half of the parmigiano. With kitchen tongs turn all ingredients to incorporate.
Plating: In shallow bowls add the noodles and broccolini, Drizzle with more olive oil, and remainder of Parmigiano. Sprinkle with pine nuts, and fresh chopped parsley.
