Grain- Free Breaded Tofu

There’s something deeply satisfying about a simple dish done with care. Crisp on the outside, tender on the inside, and layered with grounding flavor. This grain-free breaded tofu is a way to bring texture, nourishment, and presence to the plate using clean, thoughtful ingredients. Serve with Spring Greens.

Ingredients

  • 4–6 slices extra-firm tofu

  • 3 tbsp rice wine vinegar

  • 2 tbsp tamari

  • Juice of 1 lime

  • 1 tbsp fresh cilantro, chopped

  • 1/2 cup almond flour

  • 1/4 cup arrowroot powder

  • 2 eggs

  • Sea salt, to taste

  • Ground pepper, to taste

  • Ghee or coconut oil, for cooking

Method

  1. Lay the tofu slices on paper towels to gently draw out excess moisture.

  2. In a shallow bowl, whisk together the rice wine vinegar, tamari, lime juice, and chopped cilantro. Add the tofu and allow it to marinate for about 15 minutes, absorbing the flavor.

  3. In a second shallow bowl, combine the almond flour, arrowroot , and a pinch of salt, using your fingers to blend evenly.

  4. In a third bowl, beat the eggs until smooth.

  5. Remove the tofu from the marinade. Dredge each slice in the almond flour mixture, coating both sides, then dip into the beaten eggs to fully coat.

  6. Heat a nonstick pan over medium heat and add a small amount of ghee or coconut oil.

  7. Cook the tofu until golden and crisp on both sides.

  8. Finish with a touch of sea salt and freshly ground pepper, and serve alongside vegetables of your choice. Serve with Spring Greens.
