I lived in Santa Fe for twenty-three years, of the many things I miss are the smell, taste, and sight of Hatch Green Chilies being roasted on the streets, at the markets, and in some cases parking lots of local favorites.

All I can say is when you have a craving for a dish that cradles you when you most need it, the only course of action is to get some green chilies, crank up the oven, and make a variation of this beloved dish. Even if they come from a can. If you live in a place like North Carolina, which I now call home, is how you get Roasted Hatch Chili: At least until your long-time friend mails a batch or two for you to pop into the freezer for those occasions when you need a taste of nostalgia.
The intoxicating fragrance is ubiquitous in Santa Fe, along with a touch of rocky mountain cool air, to nudge us that the change of seasons isn’t far away. I was never sad to see summer pass, because cooking alongside the seasons keeps our senses from complacency, and our palettes fresh. Each season has something delectable, colorful, and unique to offer.
So, without further adieu, here is my variation of green chili stew, made in my kitchen in Asheville North Carolina.
