Almond Crusted Tofu Shiitake Mushrooms Coconut Cremini Sauce

When September arrives our body's naturally start craving warmer fare. A scrumptious Vegetarian and Vegan dish that is worthy of a dinner party.


Shiitake Mushrooms boost the immune system. Tofu is a good source of protein, and contains nine of the essential amino acids our body needs.

Make sure it is non GMO and Organic.

Season/ Autumn

Prep Time: 15 minutes

Cook time: 20 minutes




Serves 4

Crusted Tofu & Shiitake

1 container Tofu, sliced into 8

1/2 lb. Shiitake mushrooms, sliced

2 tbsp. almond flour

1 tsp. salt

1 tsp. garlic, minced

pinch red pepper flakes

1/2 lime, juiced

1/4 cup cilantro, chopped

3 tbsp. coconut oil

1 tbsp. water


Cremini mushroom sauce

1/2 lb. cremini mushrooms, sliced

1 tbsp. miso

1 bay leave

2 sprigs thyme

1/2 tsp. lemongrass, grated

1 garlic clove

2 tsp. juiced lime

cilantro for garnish

1 tbsp.coconut oil

1 cup water, filtered


In sauce pan bring water to a low boil. Add a pinch of salt, bay leave, thyme ,garlic clove, lemongrass and cremini mushrooms. Simmer for 15 minutes. Pull out bay leave, garlic and thyme. On low heat, add miso and coconut oil. Stir well. Turn off heat and let sit 5 minutes. Add to blender and blend well. Taste for seasoning. Set aside.


Heat nonstick or cast iron pan. Add 1 tbsp. coconut oil, and garlic. Stir for 1 minute. Add shiitake, red pepper flakes, salt to taste, and 1 tsp. of water. Stir until shiitake get soft. Set aside and keep warm.


Lay tofu on paper towels to remove excess moisture. Season with salt and cover each slice with almond flour.

Heat same pan on medium heat. Add remainder 2 tbsp. coconut oil. Lay tofu in single layer with almond flour side facing up. Cook for 4 minutes. Gently turn over, and repeat 4 minutes. Some flour might not stick to tofu when turned.


Assembly: Reheat mushroom sauce. In four shallow bowls lay cremini sauce on the bottom . Pile shiitake mushrooms on top. Lay 2 slices of tofu touching each other. Sprinkle with cilantro and lime juice. Serve immediately.


Cooks note: Tofu might have to be made in batches.

Can be served with Lemongrass green beans in the same bowl. Adds color and texture to the dish.
